Y’all it has been one heck of a month. I thought September was going to kill me. But as far as person life goes, October has been EXHAUSTING! Mentally and physically exhausting.
So, for those that don’t know, the job that I have been doing since December 2016 goes away in January. It’s sort of like a political term; it only lasts so long. Yes, I knew this might happen at some point. However, what I didn’t know was that OPM (Office of Personnel Management) put a nix on my department allowing them to re-advertise my job with qualifiers.
In fact, I was almost jobless a few months ago. OPM told them to end my term early. There are 4 of us in this situation. Actually, three of us now. One has been re-hired at the new position type. Kuddos for him!
In all this mess of the stress of almost losing my job, fiscal year close in the new system, looking for a new job, and getting very little offers or even interviews for that matter, a person needs all other aspects of life to be simple. Truly simple and easy. Simple, easy, and COMFORTING!
I’m sure y’all were wondering where I was headed but you should always know I’ll make the connection.

For this meeting, we were to head to a museum for a scavenger hunt. Sounds great right? That’s what I thought. I also thought I could handle the 1 1/2 hours they said we would be walking.
In actually, we left at 12 and didn’t get back until 2:45. Yeah, that’s almost 3 hours on my feet and wear and tear on my knee. This would have been fine except for the fact that the hubs worked that night. Yeah, that meant I had to walk up the hill home. I’m fine with that, but after walking about the National Portrait Gallery for almost 3 hours, not so much. As if that all wasn’t enough, I had to walk the dogs when I got home!!

What did I do for dinner? Well, I wanted to call for a pizza or something. Instead I just grilled up some of these applewood smoked ham slices from Frick’s Quality Meats. I also shredded some Swiss cheese, diced an onion, a tomato, and popped open a can of crushed pineapple. Finally, I heated some tortillas on the gas stove and sat down to delicious grilled ham Hawaiian tacos. Start to finish it was less than 30 minutes.

Their ham makes me want to resurrect a family recipe for hot ham and cheese sandwiches. They’re true comfort in a quick and easy sandwich for lunch or a light dinner with a nice hot bowl of soup. Can y’all hang on a minute? I’m getting hungry.
There’s just the two of us, and we have a bit of ham left over. It’s cold, rainy, and icky outside. What would you make? Yeah, I’m thinking soup, too. I’m thinking of making a hearty and delicious broccoli cheese soup with ham. Maybe I’ll make some croutons to float on top. We have quite a bit of stale bread in the pantry. Panzanella was on the menu, but it got cold. Maybe a ham and cheese Panzanella? That sounds good, too!
I cut my ham into long strips. However, you could easily chop it up if you wanted. They’re your tacos! I wanted to make sure that I had a bite of Frick’s delicious ham so I kept the long strips. I put the diced onion, tomato, and Swiss cheese on the bottom then the ham and a little topping of the crushed pineapple.
The crushed pineapple acted like a crema on top of the tacos. You could swap out tidbits, but I definitely wouldn’t do chunks. They would be too big unless you wanted to chop them smaller. Again, they’re your tacos! Top them how you like.
I love all those colors.
The ham with its dark pink color, the yellow pineapple, the red tomatoes, and the white onions and cheese. I almost make a broccoli slaw to go under these, but the hubs said we didn’t need anything else. Just a few grilled ham Hawaiian tacos on the plate and we’re good to go!
You could serve it with a nice tropical couscous. I almost made one of those, too. Some couscous, toasted almonds, mandarin oranges, orange juice, red onion, jalapeno. You see where I am going with this. It would be a great side for these tacos. Black beans and some rice would be good, too. Or some Hawaiian furikake seasoning rice. Take your pick!
